Conference Weekend Orange Almond Sweet Rolls

Friends, you will love these Orange Almond Rolls. I make them for General Conference every six months now and my teenage boys love them and love me a little more for making them.

They are a labor of love. But worth it in every way.

I've tweaked Joanna Gaines' recipe from her Magnolia Table Cookbook, which I really enjoy drawing from on a regular basis.

You can use store bought dough to save time, such as Pillsbury crescent rolls, or Rhodes frozen dough. But I like to make them from scratch.

For the Dough:

1 Tbls. yeast granules

1 Cup warm water

2 Tbls. sugar

Proof the yeast for 10 minutes in a silver Kitchenaid bowl. (If you don't have a Kitchenaid, what are you waiting for? Get one as soon as possible. Especially if you have teenagers. Baking is the way to their hearts!)

Add to the yeast mixture:

 2 cups milk heated in microwave for 40 ish seconds.

1 egg

1/3 cup sugar

1 tsp salt

8 - 9 cups all-purpose flour, unbleached

Mix in Kitchenaid with bread dough attachment until dough becomes elastic and pulls away from the sides of the bowl. Butter a large bowl and place dough in bowl in a warm, dry place to rise for about one hour.

Divide dough in two.

For the Filling:

12 Tabls. (1 1/2 sticks) butter at room temperature

3/4 cup packed light brown sugar

4 tsp. finely grated orange zest

1 tsp ground cinnamon

1 cup sliced almonds

Mash into a paste using a large fork. I like to melt the butter a little in the microwave for about 15 seconds first.

Make the rolls:

Spread half the dough mixture onto a non-stick work surface such as marble countertop, floured surface or large floured cutting board. Make a large rectangle with the dough. Spread half the orange/butter mixture evenly over the dough. Scatter the almonds over the butter. Starting with one long side, roll up the rectangle to form a log. Do the same with the remaining dough, butter mixture and almonds.

Cut each log crosswise into even pieces. Arrange the pieces cut side up on a cookie sheet sprayed with non-stick cooking spray.

Let rise a second time for thirty minutes while oven is pre-heating at 375 degrees.

Bake until deep golden on top, about 30 minutes.

Meanwhile, make the glaze:

2 cups powdered sugar

Finely grated orange zest of 2 oranges

2 tsp. vanilla

1/4 to 1/2 fresh orange juice

In a medium bowl, whisk together the powdered sugar, orange zest, and vanilla. Whisk in enough orange juice to make a soft glaze.

Once rolls are done and out of the oven, let cool five minutes, then drizzle over the rolls. Serve warm.
